Matcha muffins






Matcha has so many health benefits including boosting the metabolism, concentration, energy levels and lowering cholesterol and blood sugar. It's also packed with antidioxidants and catechins that help fight cancer.
One cup of matcha is equal to drinking 10 cups of green tea. And if you can be healthy while eating cake then what's not to love!

Makes 8 muffins


Pre-heat oven to 190c/ gas mark 5 / 375f

Line a muffin tin with cases.

Ingredients:

250g plain flour
100g sugar
2 heaped tsp matcha powder
2 tsp baking powder
pinch salt 

250ml soy, almond or coconut milk
80ml vegetable oil

Whisk the oil and milk together in a jug. Mix all the dry ingredients together in a large bowl. Add the wet ingredients to the dry and stir until just combined and the mixture is still a bit lumpy.

Pour into muffin tin and bake for 25 minutes until risen and a toothpick comes out clean. 
Remove from oven and leave to cool on a rack before turning out and icing.

Icing ingredients -

2 tsp dairy free marg
2 tsp soy milk
2 tsp matcha powder
1/2 cup of icing sugar

Optional Finishing touch - handful of shredded coconut.

Using a mixer or hand mixer, beat together the marg and milk for 1 minute, add the sugar and matcha and mix for 5 minutes until light and fluffy. If icing is too runny or stiff, add more icing sugar or milk until desired consistency.
When the muffins are completely cooled, ice, sprinkle on some shredded coconut and enjoy! 

Vanilla buttercream recipe -

75g dairy free marg (vitalite works great)
75g vegetable fat (trex)
1tbsp vanilla extract
750g icing sugar
50ml soy milk

Using a hand or stand mixer, whip the marg, fat and vanilla together until creamy, add half the icing sugar and milk until combined. add the rest of the sugar and mix until you have a smooth consistency, adding more milk if it's too firm.
