Vegan Chocolate Chip Banana Bread




After a conversation on Instagram yesterday, I've finally gotten around to posting this recipe. (My user name is Carly_182 if you'd like to take a look)
So this discussion with another IG user was about how in both our workplaces, on different occasions someone had brought in a banana bread that wasn't vegan friendly, because it contained eggs. It's amazing how many people think you can't make a decent cake without eggs, or some form of dairy product. But this recipe, and my whole blog, is to show people that it's simple and easy to make incredibly tasty treats.
I bake this bread/cake at least twice a month. My husband loves it and it tastes amazing warmed up with vanilla non-dairy ice cream. It's also the most effortless recipe in my collection so far.
If you feel like a plain banana bread then just omit the chocolate chips, it won't affect the amounts or finished bread.

Makes 1 loaf or 1 11x7 brownie pan

Ingredients:

3 ripe bananas
60g dairy free margerine
200g white sugar
250g self raising flour
1 tsp salt
1tsp bicarb of soda
150g dark or plain chocolate chips


Pre-heat oven to gas 4/180c/350f
Grease a brownie pan or loaf pan with margerine or oil

Peel and mash banana in a large bowl until mushed up.
Add margerine and sugar to bananas and cream together.
In another bowl, combine flour, salt and bicarb. Add to the banana bowl, gently mixing to combine.
Fold in the chocolate chips.
Pour mixture into your greased tin and place in the oven for 30 minutes, or until a toothpick comes out clean.
Leave to rest for 30 minutes or cool, then use a plastic spatula to loosen the sides and cut into pieces with a sharp knife.
