Coconut and Bounty Balls
As I've mentioned before, my house is full to bursting with dessicated coconut. So I'm always looking for new and delicious ways to use it up.
And so there came bounty and coconut balls! No bake balls of tastiness that hardly require any effort, and they make a cute little gift if put in boxes or wrappers. Most of my family and friends had a box of them for Christmas last year and they were all very happy with the taste. (Except for my dad who hates anything besides milk chocolate, but he liked the plain coconut ones. Can't win them all I'm afraid!)
Makes 24 balls
Ingredients:
1 and 3/4 cup dessicated coconut, plus extra for coating
4 tsp coconut oil
3 tbsp maple syrup
2 tbsp coconut milk
1/2 tsp vanilla essence
1/8 tsp salt
Optional - plain or dark dairy free chocolate 100g
Place 1 cup of coconut and the coconut oil into a food processor and mix until you have a butter like consistency
Add the maple syrup, milk, vanilla and salt to the processor and mix on high until combined.
Add the 3/4 cup coconut and mix by hand until you have a batter/dough like consistency.
For plain coconut balls - Fill a plate or bowl with enough dessicated coconut for coating. Shape the batter into 1" balls and roll in the extra coconut until covered. Refrigerate for an hour or so, then enjoy!
For chocolate covered coconut balls - Shape the batter same as above, into 1" balls, then refrigerate them overnight, WITHOUT rolling them in coconut. Next day, melt your chocolate in a pan or microwave and pour into a shallow bowl. Take your coconut balls and roll them in the melted chocolate until completely covered, then sprinkle with some dessicated coconut. Put back in the fridge and leave for 30 minutes until set.
