Perfect for a breakfast treat, or dessert. You can top these muffins with a variety of nuts. I did a pecan, a macadamia (my favourite) and a walnut. All with home made streusel on top, which is optional but I'll include a quick recipe for it at the bottom of the page.
Makes 12 muffins
Ingredients:
1 & 1/2 cups plain flour
1/2 cup white sugar
1/4 cup soft brown sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 very ripe bananas mashed
1/2 cup vegetable oil
1/2 cup canned coconut milk
Handul of chopped nuts of your choice
Preheat oven to gas 4/180c/350f
Line a muffin tray/s with 12 paper cases
Mix flour, sugars, cinnamon, nutmeg, powder, soda and salt together in a large bowl.
In a separate bowl mix bananas, oil and coconut milk together.
Add the banana mixture to the flour bowl and stir until combined
Pour the batter evenly between the muffin cups and fill about 2/3rds full.
Top the muffin batter with a few chopped nuts and bake in the oven for 30 minutes, until a toothpick or knife comes out clean.
If you want streusel topping, add this 10 minutes before baking time is up.
Streusel recipe -
2 tbsp margerine
1/2 cup plain flour
3 tbsp dark brown sugar
1/2 tsp ground cinnamon
Using your fingertips, mix all the ingredients together in a bowl, until crumbly. Sprinkle a small amount on top of each muffin.
Freeze any leftovers in an airtight container.
