Easy Vegan Rice Krispy Squares




3 ingredients, and 5 minutes. That's all you need to make these incredibly moreish rice krispy squares.
Get your hands on a bag of vegan marshmallows. Freedom vegetarian mallows are the easiest to get hold of, sold in Holland and Barretts and independent health food shops. Ananda also do marshmallows but are more expensive than the Freedom ones, so maybe save them for a special occasion ;)

Makes 12-15 squares depending on how big you cut them

Ingredients:

2 bags of vegan marshmallows (150g or thereabouts)
2 tbsp vegan marg, I use Vitalite for everything
200g vegan rice krispy cereal (Asda smartprice are D3 free)

Line a 9x9 square pan or similar, with baking parchment.
Melt the butter and marshmallows together in a medium size pan, over low heat, stirring continously.
Remove from heat and stir in rice krispies until totally coated in melted mallow mix.
Put your mix in the lined pan and press down and around the edges so it's nice and neat.
Put in the fridge for 15 minutes to harden, then remove and cut into squares.
Store in an airtight container for up to a week.

    1. If the cereal box says vitamin D is normally is D3 I'm afraid.
      Aldi and Lidl have a really good range that don't contain any vitamin D. Sorry it took me ages to reply, only just seen your comment !
