Peanut Butter Cookies (Dairy and Egg Free)

I absolutely ADORE these cookies! It's impossible to only have one, and you can freeze them too (If you can restrain yourself from scoffing the lot)
Deliciously simple and quick to make, They are perfect with a cup of tea or coffee.
Remember if you want them to be Vegan-friendly, make sure to use dairy-free margarine!




Makes 12- 16 cookies, depending on size.  Oven @ 200c / Gas 6

Ingredients

75g Vegetable Margarine (Vitalite works well)
50g Sunpat Peanut Butter 
50g Sugar
50g Demera Sugar
100g Plain Flour
Pince of Salt


Method



Grease a large baking tray or 2 medium size with marg or baking sheet parchment

Blend Margarine with peanut butter and stir in the sugars

Stir in the flour to make a dough




Shape the mixture in balls. Ping pong ball size makes about 12, but you can make them bigger or smaller if you want

Space the balls out on baking trays and flatten each slightly with a fork, so it makes a criss-cross pattern






Bake each tray for around 15 minutes until light brown

Leave to cool slightly before moving to a wire cooling rack
