Blondies are the less chocolatey (that's a word right?) sister of brownies.
These have got a completely different texture and taste to ones I've made before, but they melt in your mouth, and the peanut butter isn't overpowering with the chocolate chips.
The original recipe had mini peanut butter cups instead of chocolate chips. I changed it as I'm not a big fan of peanut butter itself, just the peanut butter flavour. I've come to terms with my weirdness, so should you ;)
Peanut Butter Blondies
Recipe adapted from Baker By Nature
Ingredients:
1 cup plain flour
1 cup light brown sugar
1/4 cup vegetable oil
3/4 cup peanut butter
1/2 teasp salt
1/4 tsp baking powder
1/4 cup almond milk unsweetened
1/2 cup chocolate chips, plain or dark
Preheat oven to gas mark 4/ 180c/350f
Line a brownie tin with parchment or grease with margerine
Mix brown sugar, veg oil and peanut butter together, until smooth
Add your flour, salt, baking powder and combine
Pour in almond milk and stir until mixture is smooth, then fold in chocolate chips
Pour into your pan and bake for 25-30 minutes, or until a toothpick comes out clean
Let cool in the pan on a wire rack
Leave to cool COMPLETELY before cutting! Otherwise they'll fall apart.
If you're not terribly patient you could put them in the fridge to speed it up.
